Roasted Cauliflower with Caramelised Onion

INGREDIENTS (serves 2-4)

  • 1 large Cauliflower
  • 100g Queso Manchego
  • 2 tablespoon Farmgate Cheese Caramelised Onion Jam
  • 50g Pinenuts, toasted
  • 1 bunch of fresh Thyme

METHOD

Pre-heat oven to medium heat. Remove the leaves from the cauliflower. Cut around the underside of the head removing most of the core. Detach the florets where they join at the center and separate the florets by cutting through the base to make smaller florets.
Place evenly onto baking tray. Using a fork, scatter the Caramelised Onion on and around the cauliflower. Sprinkle also with the fresh thyme.
Place in oven to cook for 10-15 minutes until cauliflower is softened and starting to brown.
Remove from oven and sprinkle with pinenuts whilst tossing slightly to combine the ingredients on the tray.
Finely grate over half of the Manchego and place back in the oven for a further 5 minutes. Remove from oven and place in serving plate and top with remaining finely grated Manchego.

* You could subsitite the Manchego for your favourite hard cheese like Pecorino or Parmigiano Reggiano or even a sharp blue mould cheese.
