INGREDIENTS (Serves 2 -4)
- 3 Bunches Baby & Golden Beets, halved with greens attached
- 2 Tablespoons Extra Virgin Olive Oil
- 2 Teaspoons Sea Salt Flakes
- Black Pepper
- 2 Tablespoons Farmgate Cheese Hazelnut Honey
- 100g Stilton (or other creamy Blue Cheese)
Preheat oven to 180C.
Wash beets well in cold water, and remove any bad leaves. In a bowl, toss beets with 1⁄2 the olive oil, salt and pepper. Transfer to a baking tray and add 1⁄4 cup of water. Place into oven and roast for approx. 25 mins, or until tender when pierced with a fork.
Remove from oven and let cool slightly (leave oven on). With a kitchen towel, carefully pull the skins from the beets. Don’t worry if some still clings to the beets, a little skin remaining is fine.
In a small bowl, place Hazelnut Honey and crush hazelnuts slightly with a spoon. Return beets to baking tray and drizzle with Hazelnut Honey.
Place back into the oven for 5 minutes.
Remove from oven and transfer to a serving dish. While still warm, crumble Stilton over the beets and drizzle with remaining olive oil and season with salt and pepper.
Serve warm or at room temperature.
