Crunchy Tuscan Salad

INGREDIENTS (serves 2-4)

  • 2 Punnet Mixed Cherry Tomatoes, halved
  • 2 Lebanese Cucumbers, cut lengthways & chopped
  • 2 Radish, thinly sliced
  • 1 Red Onion, thinly sliced
  • 1 bunch Fresh Basil, roughly torn
  • 6 x Black Pepper Flat Bread / Lavosh, crushed
  • 100g Meredith Marinated Chevre
  • 2 Tablespoon Extra Virgin Olive Oil
  • Salt & Pepper to season

METHOD

Combine Tomatoes, Cucumber, Radishes, Basil & Onion in a large bowl, and toss slightly to combine. Add Extra Virgin Olive Oil and season with Salt & Pepper to taste.
Place into serving bowl or platter and top with crushed Flat Bread and crumbled Fresh Chevre.

Serve immediately.
