Crunchy Tuscan Salad
INGREDIENTS (serves 2-4)
- 2 Punnet Mixed Cherry Tomatoes, halved
- 2 Lebanese Cucumbers, cut lengthways & chopped
- 2 Radish, thinly sliced
- 1 Red Onion, thinly sliced
- 1 bunch Fresh Basil, roughly torn
- 6 x Black Pepper Flat Bread / Lavosh, crushed
- 100g Meredith Marinated Chevre
- 2 Tablespoon Extra Virgin Olive Oil
- Salt & Pepper to season
METHOD
Combine Tomatoes, Cucumber, Radishes, Basil & Onion in a large bowl, and toss slightly to combine. Add Extra Virgin Olive Oil and season with Salt & Pepper to taste.
Place into serving bowl or platter and top with crushed Flat Bread and crumbled Fresh Chevre.
Serve immediately.
